An easy Monday dinner

On a hectic Monday an easy dinner is perfect! Yesterday I scrambled together some oven roasted chicken with rice, curry sauce and a side salad, easy and delicious!  To learn how to make it, keep reading below :)



Take some chicken breast, frozen or thawed, and place them in an oven safe dish. Season them up with some salt and black pepper, chicken spice and garlic powder. Cook them in the oven at 225°C for about 25-35 minutes, depending on if they’re frozen or not.


Cook the rice according to instructions on the box. For the sauce, melt some butter in a pot. When it’s melted, add some curry and let it boil for a few seconds. Heating up the curry this way releases more intense flavor. Add about a tablespoon of flour, I use wholegrain flour, and whisk. Add some 15% cream, a little at the time, and whisk while you bring the sauce up to a boil. When it’s boiling, lower the heat and let it cook for about 10 minutes, stir occasionally. Towards the end of the cooking time, ad some salt, black pepper and a hint more curry and stir.

For the salad I used some mixed greens, cucumber and baby tomatoes. For a healthy and tasty dressing, dress the veggies up in some walnut oil and season it with some salt, black pepper and Italian salad spices. Toss everything around and serve.

It really isn’t more complicated than that! Cooking the chicken in the oven gives you free hands to focus on the sauce while the bird is getting tender and juicy. This is absolutely my favorite way of cooking chicken!
