Omelet Muffins

Hi guys! In this video I teach you how to make omelet muffins, an easy recipe that is packed with flavor! In the recipe I convert my favorite pie into a muffin using chicken, bacon, leeks and mixed greens, but you can choose any toppings you like :) Depending on what topping you choose these omelet muffins is good for breakfast, lunch or dinner. It's all up to you :) You can find all of the ingredients and directions below.  



MEASUREMENTS: Makes 6 omelet muffins
6 eggs
1 large chicken breast
140 g of bacon
1 leek
Mixed greens
Shredded cheese
Salt, pepper, chicken spice

DIRECTIONS:
Cut the chicken, bacon and leeks into tiny pieces. Add some cooking fat to a hot frying pan and cook your bacon until it's nice and crispy. Let it drain on some paper towels.

Cook the chicken in the remaining bacon fat for extra flavor. Season with salt, pepper and chicken spice. Let cook all the way trough.

Whisk your eggs into a smooth mixture and season with salt and pepper.

Use cupcake tins and a cupcake tray for the omelet muffins. Spoon in the bacon, chicken, leeks and mixed greens and stir to combine. Pour the eggs on top all the way to the rim and top with some cheese.

Bake in the oven for 20 minutes at 225°C/440°F and serve with a dinner salad.
