Easy peasy omelet

Hi guys! Here is a tip for all of you food lovers out there: My boyfriend loves when I make him omelets for breakfast, but the truth is, I suck at it! Every time I try to make one it just falls apart in the pan when I try to flip it or serve it. So then I got the idea of starting to make my omelets in the oven instead, and it turned out great!  

Here is a recipe for a quick, easy peasy breakfast omelet.

Preheat the oven to 225°C (about 440°F). Cut some bacon into small pieces and cook them in a frying pan until crispy. Add the bacon to a baking pan and slice in some cherry tomatoes, and add some baby spinach and arugula. Wisk 4 eggs together in a bowl. Add a pinch of salt, black pepper and white pepper. Wisk once more and pour the eggs ontop of the omelet toppings. Make sure the eggs are covering the entire bottom of the pan and cook in the oven for about 10-15 minutes, until the eggs has stiffened and the omelet has some nice color.

This omelet is for one person, but if you’re cooking for two you can just add some extra toppings and double the eggs, but don’t forget that the cooking time will increase as well.
