Raw Strawberry Ice Cream Cake

Hi guys! We had some friends over last weekend and I made Raw strawberry ice cream cake for desert. As the name states, this ice cream cake is completely raw, which means that it is 100% sugar, wheat and dairy fee. This is a great treat if you are allergic, trying to watch your weight or just want a healthier alternative.

My cake turned out more on the pop stickle side in terms of consistency, so for me this wasn't a creamy kind of ice cream cake. I have only made this once so I am not completely sure if this is how it is supposed to turn out, but I was definitely pleasantly surprised by the results. And the guest liked it too, which is the most important part :) To learn how to make this easy recipe, keep on reading below!


Put 250 grams of almonds in a food processor and ground to a fine powder. (When I made my cake a piece of plastic broke off while doing this, so make sure you have a food processor that's up to the job!) Add in 12 dried dates and mix until the mixture is well combined. Press the dough into the bottom of a cake pan with a removable bottom. Make sure you press it firmly.

Clean out the food processor. Then add 3 bananas and 400 grams of fresh strawberries. Mix until smooth. Add 1 tbs of agave syrup and a squeeze of fresh lime. Mix again in the food processor and pour the cream into the cake pan.

Cover the cake pan and keep in freezer until about 15-20 minutes before it's time to serve. Then take the cake out and decorate it with strawberries. Put the cake back in the freezer once you have served all the pieces you need.
